In the foothills of Crete's Lasithi Plateau, our Koroneiki trees have stood for over three centuries. Each November, we hand-pick the olives at peak phenolic ripeness — before the cold rains come — and press them within four hours of harvest.
The result is an oil of extraordinary complexity: grassy, peppery, with a lingering finish that speaks of place. Polyphenol counts that rival any laboratory-grade supplement. This is not olive oil as ingredient — it is olive oil as experience.
